How to Make Crushed Ice at Home (and When to Just Buy It)

Crushed ice turns a good drink into a great one. It chills faster than cubes, it's what a mojito, julep or bramble needs, and it makes seafood and fruit displays look professional. Here's how to make it at home – and when it makes more sense to buy it ready-crushed.

1. The bag and rolling pin method (no equipment needed)

Put a handful of cubes in a strong freezer bag or wrap them in a clean tea towel. Squeeze the air out, lay it flat and tap firmly with a rolling pin, meat mallet or the bottom of a saucepan. Fewer, harder taps give chunky "pebble" ice; keep going for a finer, snow-like texture. Use it straight away.

2. The blender method

Add a cup of cubes to a blender and use short pulses rather than running it continuously – that keeps the ice crisp instead of slushy. Check your blender can handle ice first; many say so in the manual.

3. The food processor method

Use the standard blade and pulse in short bursts. Don't overload it: two or three handfuls at a time gives an even result.

4. A manual or electric ice crusher

If you make cocktails often, a hand-crank or electric crusher is the quickest way to get consistent crushed ice for a few drinks at a time.

Tips for better crushed ice

  • Start with clear, hard-frozen cubes straight from the freezer – soft, wet ice turns to slush.
  • Crush just before serving and keep it in an insulated bowl or ice bucket.
  • Chill your glasses so the ice lasts longer in the drink.

When to just buy crushed ice

Home methods are fine for a couple of drinks. For a party, a bar shift or an event you'd need to crush kilos of ice – and it melts while you work. That's when a bag of ready-crushed ice saves the day.
